We present an easy take on a beverage from the seasonal drinks list. It's a party-sized prepared mix which is packed full of essence of the holiday season, which makes it excellent for a celebration. Reserve the remaining citrus syrup to use in brunch beverages, sweets, or to make more rounds of bikinis.

Yields 10 guests
Ingredients for the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Place all the items inside a saucepan, bring to a simmer, stirring so the sugar melts. After that, take off the heat and let it to cool down completely. Pour into an clean bottle, close it keeping it chilled, where it will keep for about one month.
For the Cocktail Base: Combine every spirits and syrup into one big jug, leave to sit for one hour, then strain best through a fine cloth, making it perfectly clear.
For serving: Pour 85ml of the premix into a mixing glass packed with ice, gently stirring gently for one minute to cool it down. Filter into a chilled martini glass or equivalent, garnish with a few cranberries adding the final touch by giving it a light spray with the mandarin essence above the glass.
